Cooking with Rich and Cat: Fresh Ravioli
Though fresh pasta is better than any dry pasta, the work to obtain the thin sheets can be quite exhausting on Rich who has to use the squeaky hand crank of the pasta machine. To remedy this issue, Rich purchased the Kitchenaid Pasta Attachment to make our lives easier. Not only did it save his hands from injury, it also was time efficient in allowing us to make four batches of spinach mushroom ricotta ravioli! I even experimented on a few by adding a quail yolk so it would burst when cut into. Here is a collage of the process….
As good as it was, I can’t wait to make the real thing. In Florence, we will be taking a four-course cooking class to learn how to make authentic Tuscany pasta!
